Chateau Civrac 2007 Côtes de Bourg 15.5 Drink 2009-11
Cabernet Sauvignon, Merlot, Malbec, aged in new oak. 35% Malbec gives a soft fruity approach with a sweet vanilla finish. Quite deep, greyish crimson. Slightly peppery and herbaceous on the nose smells very fresh and somehow summery. Some capsicum notes. Fresh and a little bit green on the palate but in an attractive rather than unripe way. Smooth and fresh, lightish but not short on the finish.

We are taking a very high quality, but respectful approach to winemaking, a "slow" approach, including hand harvesting and minimising any chemical treatments. This is leading to a fusion wine of distinctive quality.
